Remove the bread crust and cut it into small dices.
Place the bread crumbs in a bowl, add the milk and stir with a fork. Let the bread absorb the milk.
Mince very fine Garlic, Capers, Anchovy fillets and Parsley.
Add to the bread crumbs mixture an mix well mashing with a fork.
You should get a soft filling.
Butterfly the prawns with a sharp knife.
Place the prawns on a sheet of food plastic or cling film.
With a flat meat tenderizer gently flatten the prawns.
Place two prawns on your hand palm
Place a tablespoon of stuffing in the middle.
Fold the edges and roll up pressing lightly in your hands
Once all four involtini are made, take two rolls and gently insert a wooden skewer.
Repeat the same procedure with the other two.
Prepare the dressing: Mince garlic and parsley, place them in a bowl, add extra virgin olive oil, lemon juice, dried oregano and salt.
Mix well with a whisk until obtain a creamy dressing.
In a pan over medium heat, place 2 tbsp oil, when is hot, put in the involtini.
Brown the involtini 45 seconds per side.
Lid on and cook another one minute per side.
Serve the Involtini with mixed salad and some slice of lemon.
