Prawns stuffed with a soft and simple filling made with white bread crumbs soaked in a little milk and minced garlic, capers, anchovies, and parsley.

How to prepare Prawns Involtini?

You must know that to make the involtini you need some fairly large size prawns, king prawns or tiger prawns are perfect and you need two prawns for each roll.

Butterfly the prawns with a sharp knife, place them in a sheet of kitchen film and beat gently to flatten them with a Flat Meat Tenderiser.

Place two prawns in the palm of your hand, place a little stuffing in the center (here comes the difficult step) and roll the prawns with your fingers.

Gently pierce them on a wooden skewer.

Don’t worry if the first few times you can’t make them perfect, with a little practice you will improve.

However, you can always watch the video recipe below.

Cook the involtini one minute per side in a non-stick pan with a drizzle of oil.

Dress the involtini with “Salmoriglio“.  A Sicilian dressing made with olive oil, lemon juice, minced garlic, chopped parsley, oregano, salt, and pepper.

Serve with a nice mixed salad.
