What is AUTHENTIC ITALIAN CUISINE?
Italian cuisine has always been synonymous of excellence and authenticity all over the world.
This means it is one of the most appreciated, but also one of the most imitated, which is not always positive.
I am an Italian chef who works abroad. Like almost all my colleagues who work outside Italy, for business reasons, we are forced to change and distort our recipes
This is the reason I opened this site. I would like to share my knowledge and my experiences with all those people who want to discover the flavors of the Authentic Italian Cuisine
The traditional Italian dishes are hundreds and each region has a wide range of recipes that not created by the great starred chefs but by our grandmothers and handed down from generation to generation.
Italy, from the point of view of gastronomic traditions, is unique in the world.
THEN, WE WILL TRY TO OUTLINE A GENERAL PICTURE OF ITALIAN CUISINE IN THE WORLD.
Abroad, especially in the United States and England, countries characterized by an intense emigration from Italy in the last century.
There are thousands of restaurants, pizzerias, pastry shops and other shops in the catering sector that propose themselves to the public as Italians but to be honest of Italian they have little.
The long list of dishes they present as Italian, but that has nothing to do with our tradition. From “parmigiana with chicken” to the Hawaiian pizza with pineapple, to finish with the “classic” pasta with meatballs or pasta “Alfredo”.
These are dishes well known abroad but that no restaurateur would ever dream of cooking and offering these in Italy.
I could say that this kind of recipe damages the image of Italian cuisine abroad, as it ends up making the public believe that there are Italian dishes.
When in reality these recipes have nothing to do with the original traditional Italian recipes
